It makes more sense to me when it's wild Pokemon attacking. When that happens, you send a Pokemon out to defend against it, and then when that battle is over you
heal your Pokemon and go on your way again. But sometimes it will be other Trainers waiting for people to pass them by so they can challenge them and their Pokemon. It's mostly considered bad or rude to reject a challenge, from what I've seen.

There are also very strong trainers who've set up locations where people come to fight them. If you beat them, they reward you with money and other privileges. I haven't done anything with them, so I can't tell you how that works specifically.

are there rewards for fighting trainers who aren't them, or do people just challenge each other for practice?

Trainers who challenge you and lose will give you money, but it's not very much, so I think they probably do it more for practice.
