Like you said, Armin views Ash like an older brother. Armin sees him as loyal, dependable, probably a little embarrassing at times (in that Ash would totally ruffle Armin's hair and joke around a little, you know he would) but it is all in a good, fond way. It is really nice to have another guy there who is just a little older than them, but still close enough in age to them to be essentially a peer and introduce them to important teenage things. Armin takes himself so serious all the time, and that sort of attitude is encouraged by people like Newt and Ford who are also pretty serious, driven people. So sometimes it is really good for him to have Ash there and turn things not so serious for a little while, while he introduces the kids to dumb fun things that are good for their wounded child soldier souls.

I think their shared time and experiences in the Seafoam caves really helped cement Ash as someone Armin knows will have his back if the situation calls for that. I guess in a way Ash sorta has become pseudo-104th in his mind. There were a few guys in the 104th who fulfilled that older brother kinda role but aren't here now, so Ash has sorta filled that niche in Armin's mind.
